Menu Makanan Dalam Pantang (3)

Chinese Style!

Sup Mee Suah

Bawang putih - Tumbuk
Bawang merah - Hiris
Halia muda - Hiris
Ikan Bilis - Rendam and tumbuk kasar
White pepper and salt to taste
A dash of sesame seed oil
Mee Suah - which is actually slim wheat noodles, some
ppl call it longevity noodles or mee sanggul.
Daun bawang daun sup, for garnishing

Tumis bawang-bawang dan halia, masukkan ikan bilis.
Tambah air, garam dan lada sulah.
Lepas mendidih, letakkan mee suah. Tabur daun2 and a
dash of sesame seed oil before serving.

Resepi Ikan- use white fish only, e.g. kerisi, merah
haddock, plaice etc

Steamed Fish 1
1 fish steak-clean and pat dry
5-6 red dates-deseeded and sliced thinly
a bit of medlar seeds (Kow Kei)
spring onion, sliced very thinly
coriander leaves, shredded finely
1 inch old ginger sliced thinly

Marinade for fish: 1 tsp salt, 1 tsp sugar,pepper, and
1 tsp oil

Steam everything for 10-15 mins over high flame.

Steamed Fish 2
1 large piece of fish
A handful of Kim Chum (dried lily flower)
A bit of black fungus(wan yee)
2-3 shitake mushroom-sliced thinly
3 red dates- halved
sliced ginger, as much as u can take
spring onion, sliced

marinade:salt, pepper, cornflour, oil

Steam as usual.

Vegetables-most vegetables are offlimits , except a
few, like kailan and sweetpeas

Tumis garlic, throw in some kind of meat (fish, beef
or chicken), old ginger and sesame seed oil

Papaya Soup
1 kg of white fish bones
a handful of raw peanuts
1 kg young papaya, cubed
1 pc tangerine peel
2 slices of old ginger
hot water
a dash of sesame oil

Tumis ginger and fishbones, add water adn the rest of
the ingredients, slow cook for 3-4 hrs.

Chicken Tonic
1 small black chicken
20 grams wai san
20 gm Kei chee
20 gm dried longan
water

Boil everything in crockpot for 2-3 hrs

key ingredients in Chinese confinement food include,
garlic, ginger,black pepper and sesame seed oil. You
must not be nervous about eating one whole fish at one
seating. It's ok to go easy on the rice, but eat white
fish banyak-banyak!

It is also good to keep a bottle of homemade black
pepper sauce to eat with grilled fish or whate3ver you
fancy.

Black pepper sauce recipe:

garlic,shallots black pepper, ginger, lime juice, salt
and sugar, saute in oil and blitz finely in a blender
before storing.
